Furaibo’s deep-fried chicken wings and beer at Nagoya

Have you tried fried chicken and beer yet? Loved this Otsumami (おつまみ) or beer snacks idea! It’s definitely a foodie match-made in heaven and this Otsumami all the rage foodie trend is nowhere subsiding just yet. If you happen to pop by Nagoya, do try the tebasaki (手羽先) at an izakaya or Japanese gastropub. Think of Buffalo wings but with a crispier and far more peppery edge. What’s the secret of Tebasaki’s incredible crunch? The answer is twice deep-frying! Tebasaki are essentially twice deep-fried chicken wings basted with soy sauce and sprinkled with sesame seeds.


Let’s learn the art of making the Great Tebasaki. Firstly, prepare the tare sauce or soy basting sauce reduction of soy sauce, sake, mirin, sugar, vinegar, garlic and ginger. Next up, the bone-dry chicken wings are marinated with salt and ground black pepper and deep fried for the first time. Remember that it’s dangerous to deep fry a wet ingredient! Coat the deep fried chicken wings with potato starch and repeat the deep frying process. This twice deep-fried method enhances the crispiness of the chicken skin. Finally, coat this bundle of crunchiness with the umamified tare sauce and voila you are ready to serve.


Just imagine washing down the umamified salty crunchy fried chicken wings with a refreshing pint of iced-cold Sapporo draught beer! It’s a bit messy to eat but well worth your effort. Catch tebasaki at Furaibo izakaya when you are next at JR Nagoya station. Your other best bet for tebasaki is Yamachan. We had our fair share at Furaibo for lunch after checking-in to the Kyoto Century Hotel in Kyoto. Do check it out at Furaibo!
